King Blue
King Blue is our highest-yielding variety, capable of producing an impressive 2–4 lbs per block. This deep blue oyster strain combines the color intensity of premium Blue Oyster with noticeably denser, meatier clusters and thicker stems. It's quickly becoming the standard choice for commercial growers who want maximum yield per block without sacrificing visual appeal or eating quality. The wide fruiting range (55–75°F) and easy side-cut method make it accessible to growers at any experience level, while the heavy yields make the economics compelling for high-volume operations.
Cultivation Tips for King Blue
Side cut with a generous 5–6 inch opening — King Blue produces large clusters that need room to develop.
This is our heaviest yielder. Ensure blocks have adequate spacing (8+ inches) for proper air circulation around large clusters.
The deep blue color is most intense at cooler temperatures (55–65°F). Warmer conditions produce lighter grey-blue caps.
Harvest timing is critical — catch clusters when caps are still slightly cupped for the best weight and shelf life.

Culinary Profile
King Blue has a slightly more intense flavor than standard Blue Oyster, with a meatier texture due to its denser growth habit. It's versatile in the kitchen — excellent sautéed, grilled, in stir-fries, or as a meat substitute in tacos and sandwiches.
