Golden Enoki
Golden Enoki is our native Michigan strain of Flammulina velutipes — a cold-weather specialist that thrives in conditions where other varieties shut down. Unlike the white, elongated commercial enoki grown in bottles, our Golden Enoki produces bountiful clusters of small, vibrant golden-orange caps on sturdy stems. This is a true wild-type enoki with robust flavor and striking visual appeal. For growers with cold rooms or unheated spaces, Golden Enoki turns a liability (cold temperatures) into an asset, producing premium mushrooms through fall and winter when other varieties need supplemental heating.
Cultivation Tips for Golden Enoki
Golden Enoki requires cold conditions — 40–55°F is the sweet spot. It will not fruit reliably above 64°F.
Ideal for unheated grow spaces, garages, or cold rooms during fall and winter months.
Side cut the bag and maintain high humidity (90–95%). Clusters emerge quickly once conditions are met.
The golden color and wild appearance distinguish this from commercial white enoki — market it as a premium, wild-type product.

Culinary Profile
Golden Enoki has a much more robust flavor than commercial white enoki — fruity, slightly peppery, with a pleasant crunch. Excellent raw in salads, lightly sautéed, in soups, or as a garnish. The golden color adds visual appeal to any dish.
